GROUND : granitic. It comes from the Hinterbourg locality.

 

GRAPE-VARIETY : Pinot Noir.

 

WINE-HARVEST : by hand with selective picking.

 

WINE-MAKING : maceration during 8 days and manual punching the cap during 5 days, maturing in Burgundian oak barrels during 12 to 18 months, bottled without fining and filtration.

 

BOTTLE AGEING : 2 to 5 years.

 

WINE TASTING : red fruit aromas (cherry, blacurrant) ; in the mouth it is elegant, fresh and nice persistency.
