GRAPE VARIETY : Gewurztraminer 100 %.

 

WINE-HARVEST : end October, by hand with selective picking.

 

WINE MAKING : long pressing during 8 to 10 hours, long fermentation : 3 to 4 months with natural yeasts,  maturing on the fine lees during 6 months.

 

BOTTLE AGEING : 5 to 10 years.

 

WINE TASTING : complex nose : crystallized fruit, exotic, spicy,honey ; powerful, syrupy and well balanced mouth.
