WINE MAKING : long pressing during 4 hours, long
fermentation : 2-4 months with natural yeasts,
maturing on the fine lees during 10 months.
BOTTLE AGEING : 5 to 10 years.
WINE TASTING : complex nose : fresh white fruit, smoked, fresh acidity, long mouth, and
persistency.
