WINE-HARVEST : end september, strong selection of botrytised grapes

 

WINE MAKING : long pressing during 10 hours, long fermentation : 2 months with natural yeasts,  maturing on the fine lees during 10 months.

 

BOTTLE AGEING : 10 to 30 years.

 

WINE TASTING : complex nose : crystallized  grape fruits, botrytis, honey, powerful, rich and fleshy mouth, freshness and persistency. Exceptionnal acidity and concentration.
